Our Production

• We use the current modern methods in olive oil extraction. This is how oil is obtained from olives;
• Harvested olives from nearby orchards go into the “Oil Production” line immediately after their arrival into our mill.
• The first phase of the whole process is to separate the olives from their leaves and wash them.
• Then the olives are crushed (in a crusher) by a disc to form a fine paste after which the paste gets malaxed for a minimum of 45 minutes so that the oil droplets agglomerate.
• The next step is to force the paste, which contains oil, black-water and pomace, into a decanter where the solids are separated from the liquid by centrifuging and ends up in a separator from which the olive oil sets off to your kitchen.
• Our olives are classified as ‘Edible Olives’ or ‘Table Olives’ from Edremit region.
